REXBURG — A new café in the Upper Valley is aiming to bring some serious health appeal.
Frisky’s Café opened last week and is already gaining fans through its gourmet salads and Acai bowls.
“We’ve got a bunch of different salads,” owner Chandler Smith said.
The unique name for the restaurant is one if its crowning features. Smith said the restaurant’s name was something that was tossed around during its brainstorming phase. A family member came up with it and it stuck.
“We just wanted something fresh and a little unique to Rexburg. We really liked the name and maybe it has a little bit of edge to it,” Smith said.
Frisky’s offers seven specialty salads with titles like the Asian Persuasion and the Spicy Latina.
“The Spicy Latina is a pork salad. It’s not like any of the other pork salads in town. It really has a kick with the jalapeño ranch,” Smith said.
Frisky’s also serves Acai and yogurt bowls, which customers can build themselves. After choosing the Acai berry blend or yogurt bowl, they combine it with granola, three choices of fruit and a topping of their choice.
Smith said they’re excited to offer fresh and healthy eats to the Rexburg community.

The Berry Frisky:Standing as one of Frisky’s staples the Berry Frisky has mixed greens, strawberries, blackberries, blueberries, raspberries, candied pecans, and slivered almonds. The suggested dressing is a huckleberry vinaigrette.
BUILD A FRISKY BOWL:
Acai Berry Bowl: The bowl has an Acai berry blend base, with granola, strawberries, bananas, blueberries, and is topped with coconut.
